Griddle temperature: 200 degrees.
Combine all dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a basin using a whisk.
Whisk together the wet ingredients (buttermilk, melted butter, and egg) in a separate basin.
Wet and granular mixtures should be whisked together until moistened, leaving small to medium lumps.
Cook bacon over medium-high heat on a griddle until brown and golden on both sides. Separate the bacon into paper towels while reserving about 1 teaspoon of the griddle fat.
Stir in the batter 1/2 cup at a time over medium heat in a skillet. Add a bacon sliver to the top. Cook for approximately 2 minutes per side, or until golden. Repeat with the remaining batter, if necessary adding additional bacon fat. Serve sliced bacon with maple syrup drizzled on top.
