Preheating the oven to 175°C or 350°F.
Whisk together the milk, eggs, vanilla extract, sugar, nutmeg, and salt in a medium basin.
In a skillet heated over medium heat, melt 1 1/2 teaspoons of butter. Stir the egg mixture into each slice of bread while the butter is melting. Depending on the size of the skillet, heat one to three slices of toast in the skillet.
Bake the toast segments, until puffed, for 8 to 10 minutes, after placing them on a baking sheet.
If the brioche bread is still relatively moist, allow it to air-dry for the duration of the night.
