Place 1 inch of oil in a medium-sized saute pan and preheat to 350–375°F over medium-high heat.
Crack eggs into a large basin, season with pepper and salt, and whisk.
Melt the butter in a medium skillet over medium heat, then add the eggs and begin to cook. Add one cup of grated cheese and proceed with the cooking process until thoroughly cooked. Eliminate from heat.
Position an egg roll wrapper at an angle to form the shape of a diamond in front of you. Cross-feed the one-third of the egg mixture across the central region of the egg roll wrapper. For the wrapper to adhere, moisten the perimeter with water in order to secure it.
If necessary, fry egg rolls in batches over heated oil until both sides are golden brown.
